Make Tonight Rice Night with Poh’s SunRice Brown Rice, Capsicum & Basil Salad

We tasked SunRice ambassador and TV Cook Poh, with coming up with super tasty, yet quick and simple recipes that can be prepared in under 20 minutes – perfect for a summer BBQ.

Here she shares her Asian SunRice BrownRice, Capsicum and Basil salad

Serves 4 – 6
Prep time 15 mins, Cook time 20 mins

1 cup brown rice
2 red capsicums, diced 1cm cubes
5 spring onions, chopped
1 cup roughly chopped basil
2 carrots, peeled, grated
4 Tbs malt vinegar OR apple cider vinegar
2 tsp sesame oil
2 tsp honey
2 – 3 Tbs light soy OR to taste

Method
Cook rice using the packet instructions. Cool. Shake the malts vinegar, sesame oil, honey and soy in a clean glass jar. Pour over the salad ingredients and toss with clean hands. Serve immediately.
